African Tilapia Fish Stew

TILAPIA

Ingredients

  • 1 lb tilapia fish
  • 3 tomatoes
  • 1 bell pepper
  • 1 habanero pepper
  • 1 onion chopped
  • ½ cup olive oil
  • ½ cup stock/water
  • 1 tablespoon bouillon powder
  • ½ teaspoon thyme
  • 1 teaspoon black pepper
  • 1 teaspoon salt or to taste
INGREDIENTS

Method

  1. Wash and clean the tilapia fish.
  2. Cut the fish into 5 - 6 medium pieces and deep fry till crispy.
  3. Blend 3 tomatoes, 1 bell pepper, and 1 habanero pepper.
  4. Sauté 1 onion (finely chopped) in ½ cup olive oil.
  5. After about a minute, add the blended tomatoes and pepper.
  6. Boil for about 10 minutes on medium-low heat.
  7. Add ½ cup stock/water
  8. Taste for salt first, then add 1 tablespoon bouillon powder, ½ teaspoon thyme, 1 teaspoon black pepper.
  9. Add the salt last.
  10. Bring to a boil, then add the fish.
  11. Simmer for 5-10 minutes while stirring as little as possible.
  12. Your African Fish Stew is ready to serve!
